Ingredients

  • 16 ounces penne pasta
  • 1/2 container Bolani Basil Pesto
  • 1 cup cherry tomatoes, halved
  • 1/2 cup fresh basil leaves, chopped or torn for garnish
  • 1/4 cup shaved Parmesan cheese (optional)
  • 1 tablespoon extra virgin olive oil
  • Salt and black pepper, to taste

Instructions

  1. Cook penne pasta according to package instructions until al dente. Reserve 1/4 cup of pasta water, then drain.
  2. While the pasta cooks, halve the cherry tomatoes and prepare the fresh basil garnish.
  3. Add cooked penne to a large bowl. Stir in Bolani Basil Pesto and toss until the pasta is evenly coated.
  4. Add cherry tomatoes and gently mix to combine. If needed, add a splash of reserved pasta water to loosen the sauce.
  5. Top with fresh basil and Parmesan cheese before serving.
  6. Enjoy warm or chilled as a pasta salad.

  • For extra flavor, lightly sauté the cherry tomatoes in olive oil before adding them to the pasta.
